A summer salad for a rainy day...

Today it has rained almost all day in Dublin, leaving most of us to expect the same summer as last year when it rained for 62 consecutive days!

This is one of my favourite summer salads (Ideally eaten on a sun drenched patio with a glass of ice cold rose!, or alternatively as I did at the kitchen table looking out onto the rain and wondering whether I need to put the heating on...)

Anyway, here it goes. There are no quantities. You can make this for one or for twenty one people without any effort.

Watermelon, Feta & Mint Salad

  • Watermelon
  • Feta cheese (or if you like its texture try halloumi)
  • fresh mint
  • freshly cracked black pepper (no salt, the cheese will provide saltiness)
  • a drop of extra virgin olive oil
  • if you feel like something more substantial add some crispy fried bacon pieces.

Cut watermelon and feta into bite size cubes.Chop mint and toss everything into a bowl. Season with freshly cracked black pepper and some extra virgin olive oil. Serve with gluten free baguette. Pour a glass of wine (optional) and enjoy!
